Hugh Fearnley-Whittingstall’s right hand man and founding Head Chef of River Cottage, Gill Meller, is launching an Wood Fired Cookery Course in the new bespoke outdoor cookery area at River Cottage HQ, Devon.
Gill’s cooking has always been deeply rooted in nature and represents the ethos that underpins River Cottage. His simple, award winning seasonal cookery style and desire to allow the ingredients in his dishes to shine has helped him to define food that reflects his surroundings with the qualities they naturally possess. From seashore to woodland, orchard to garden, field to farm and moorland to harbour, Gill shows how to create simple, honest dishes cooked naturally and sensitively over fire using several techniques fuelled by his inspiration of living and working in the Devon and Dorset landscape.
Cooking on fire is one step closer to nature and has always been Gill’s passion. Gill says: “Cooking outdoors on fire gives me great practical and professional satisfaction. It also gives me a sense of pride to be able to teach these traditional skills at River Cottage HQ where my love of cooking has evolved in tandem over the years. My approach to cooking doesn’t call for complex processes or tricky techniques and therefore I feel it is more accessible and allows the cook to engage on a wider scale. Part of cooking on fire is to be aware of where you are in the landscape and I take my inspiration from that.”
